Artichoke Canapes
from Beverly Brisko
15-18 ounces Marinated Artichoke Hearts, (chopped)
1 large Onion, chopped
2 Garlic Cloves, chopped and crushed
5 large Eggs
1/2 cup Fine Bread Crumbs
3 cups Sharp Cheddar Cheese, shredded
1/2 teaspoon Salt
1/2 teaspoon Oregano
1/4 teaspoon Pepper
4 teaspoons Fresh Chopped Parsley
1/4 cup Chopped Marinated Jalapeno Chilies
Drain half of liquid from artichoke into frying pan.
Saute` onion and garlic for 5 minutes in liquid.
Beat eggs with fork.
Add all ingredients.
Turn into a 9 x 13 inch glass dish.
Cook at 350 degrees for 30-35 min until set.
