Cioppino

Cioppino

 

1 lb         Tilapia - chopped

12 oz      packaged Shrimp - peeled and deveined, tails removed, chop if large

2 cans   Clams - chopped

1 cup      Red Wine

1 cup      Water

2 cups     Onion - chopped

2 cups     Green Pepper-chopped

3              cloves Garlic- minced

2 cans   (28oz size) cans Diced Tomatoes

1 can    (15oz size) Tomato Sauce

1 tbsp     dried Parsley

1 tbsp     dried Oregano

1 tbsp     dried Basil

1              large Bay leaf

 

Hot Sauce to taste

Salt & Pepper to taste

 

Combine all of the ingredients, except the shrimp, in a large pot. (Really good in a cast iron pot.) Simmer, vented, for 1 1/2 hours. Add shrimp in the last 15 minutes. Season to taste.

 Crock Pot : Cook 5-6 hours on high.  Add shrimp the last 1/2 hour.  Vent for a while if too soupy.
